Pinterest Success: "Best Ever Blueberry Cobbler"

We did a Costco run the previous weekend and impulsively bought a large container of blueberries.  I asked Hubs if he'd eat them with me, and he said sure.  I should have trusted my gut...that man does not eat blueberries like I do!

What better way to use up a giant amount of blueberries than in a COBBLER!  Mmmm....

Mixing in the beaten egg-vanilla concoction.  Hard to see, but I received a pastry mixer attachment with a scraper for Christmas from my Mother-in-Law...it is very handy!

I wish I took photos of Leif while I was baking...he was in the kitchen with me, playing with leftover sugar-lemon mix and making shapes.  It was really cute and reminded me of when I would make breakfast in the morning and keep him occupied with food play while Hubs slept (pre-Ozzie days).  I hope he learns how to cook well!

Anyway, the cobbler turned out really delicious-mixing lemon zest with blueberries gave it much needed acidity and the topping was perfect.  Of course I ate it with vanilla ice cream that night.

Here are a few modifications I made to the recipe:

1. It called for six cups of blueberries, but I only had four-so I made the same amount of sugar-lemon-flour mixture the recipe called for but didn't use it all (thus giving it to Leif to play with)

2. I still measured out the same amount of ingredients for the biscuit topping; it was a little more in the ratio to blueberries, but I didn't mind ;)

3. I had these tiny lemons that made it tedious to grate two teaspoons of rind...so I eyeballed about 1.5 teaspoons and then squeezed some juice in.  That seemed to work fine for me.

I definitely approve of this recipe!  It didn't take too long to make either (which is my problem as I am a slow baker/cook).  Hubs and I ate the whole thing over two days, but next time I really want Leif to try some!  Haha...

  1. That post made my mouth water! I always think I'll eat a giant thing of Costco fruit and never manage to finish it. What a good idea!
